Romans 8:19-22 For the earnest expectation of the creation eagerly waits for the revealing of the sons of God. For the creation was subjected to futility, not willingly, but because of Him who subjected it in hope; BECAUSE THE CREATION ITSELF ALSO WILL BE DELIVERED FROM THE BONDAGE OF CORRUPTION into the glorious liberty of the children of God. For we know that the whole creation groans and labors with birth pangs together until now.
The whole of creation was cursed for Adam's sin. Creation was cursed with man and FOR man because man needs the creation to exist even in a fallen state. The entire creation will be redeemed and restored to glory. There will be a new heavens and a new earth. Rev. 21:1 2 Peter 3:3. GOD's creation was perfect and included animals. HE told Adam to name the animals indicating a special relationship. HE placed the animals under the stewardship of man.
There will be a NEW EARTH with people restored, why would it not include animals? One thing's for sure; we are all going to find out.
